Thai larb

INSTRUCTIONS

  1. Heat a dry frying pan. Roast the rice on medium heat until it turns golden brown, it takes about 15-20 minutes. Be sure to stir periodically and keep an eye so the rice doesn’t burn.
  2. Place the rice in a mortar and pestle until you get a texture reminiscent of breadcrumbs.
  3. Heat oil and fry the minced meat until it turns brown.
  4. Coarsely chop green onions, coriander, mint and basil. Squeeze lime.
  5. Turn the roasted rice with the minced meat and stir. Then season the mince with lime, fish sauce, chilli, salt, green onions and all the herbs. Season with salt. Fry while stirring for approx. 3-4 min.
  6. Place the minced meat on a plate with lettuce leaves. Serve with rice or enjoy the salad with just lettuce leaves.

INGREDIENTS

  • 500 g mince of your choice
  • 4 tbsp Thai sticky rice (can be replaced with jasmine rice)
  • 6 Thai green onions
  • A bunch of fresh coriander
  • A bunch of peppermint
  • 4 sprigs of Thai basil
  • 2 limes
  • 1.5 tbsp fish sauce
  • 2 tsp chili flakes
  • Salt
